I came up with the idea of Brownie Delight while I was working in the Radisson Hotel.  I was the only Pastry Chef there at the time and I needed quick and easy recipes that taste good.  I also wanted to create new recipes for my own side business.  This creation was a dessert I could use for both.

The brownies were leftover from the day and, rather than throwing them out which often happens in a kitchen, I crumbled them up and thought that they would provide a good base for this delectable concoction.  I then looked around the kitchen to see what other goodies I could put on top of the brownies.  If I were going to put the pudding on top of the brownies I would need some kind of surface that would not let the pudding make the brownies soggy, so I used the melted chocolate.  I chose white chocolate to contrast with all of the dark chocolate flavors. 

When I originally made the dessert I crumbled up the brownies simply because they were a day old.  If you do not have day old brownies at home, then you can just make them fresh and leave them whole (like a cake).  The dessert is also very good this way.

 

Nat’s Snacks Brownie Delight 

Ingredients:

  • 1 package of brownie mix
  • 1 cup white chocolate chips
  • 5 oz box of cook and serve chocolate pudding
  • 8 oz container of cool whip

 

To prepare: 1. Grease a 9 3/8 x 9 3/8 x 2 3/8 in throw away aluminum pan.  2. Preheat oven according to directions on brownie box.  Prepare and bake brownies as directed. 3. Once the brownies are pulled from oven, immediately evenly spread the 1 cup of white chocolate chips around the brownie with a spatula or knife.  Once the white chocolate chips are melted, you can spread the chips making sure the entire top of the brownie is covered in chocolate.  4. Next, begin to prepare your cook and serve chocolate pudding according to the directions on the box.  Once made, pour pudding into a container and place a piece of plastic wrap directly on top of pudding to prevent skin from forming.  Place in refrigerator to cool, approximately 1 hour.  5.  As soon as the brownies are completely cooled, place all of the chocolate pudding on top of the white chocolate chip layer, spread evenly.  6.  Spread the majority of the cool whip evenly over the chocolate pudding layer.  7. Place in refrigerator until ready to serve  

Garnish – Crushed Oreo Cookies can be placed on top of the cool whip layer along with caramel sundae sauce.
